Anna Grace’s Campus Guide to Life, Happiness, and Sort of Surviving #3

I have eight brothers and sisters and two parents and a dog, and all of them (except the dog probably) will tell you I can’t make a decent piece of toast. I burn all toast—end of story.  I can bake cinnamon rolls for my family… I can cook up enchiladas and Spanish rice or pastas and fondues… but not toast. It’s an awkward two minutes to either stand in front of the toaster oven and pick at a thread on your sleeve, or try to multitask so you don’t feel like you’re wasting time. I chose the latter after I’d picked all of threads off my sleeves.

Well, thankfully there are no toaster ovens at the Four Winds cafeteria here at Pensacola Christian College. The Four Winds has 7 food lines, including international food, hot and cold lines, a salad bar, and a soup bar! Even among all of these options, we can get stuck on just one food and become tired of it after a while. Don’t allow your own habits to bore you—think beyond the line! Seven food lines give us a million choices to mix and match! Perhaps you have friends who have made their own recipe, pulling from different meals on the lines. Here is one of my favorite recipes from the salad line on our Sunday evening meal:

  • 1 pita pocket
  • Tuna
  • Cheese
  • Spinach leaves
  • Grape tomatoes
  • Ranch dressing
  • Those cute little salt and pepper packet-things

Just fill the pita pocket about halfway with tuna and cheese. Drizzle a little ranch dressing inside and put it in the microwave for 1 ½ -2 minutes. Back at the table, slice up your grape tomatoes and layer them in the pita pocket with the fresh spinach leaves. Salt and pepper to taste, and enjoy!
